Perfect free-from pancakes, at last!! I have been blogging for just over a year, and I have been trying to make the perfect free-from everything traditional English pancakes for well over a year! I have gone through many recipe cards as I recorded what I did in the hope that it would be the time I finally crack the formulae. BUT nope, they were too slimy (too much flaxseed/tapioca flour) or too dry – never, ever right.
So I stopped bothering and enjoyed making up (& scoffing) all our chubby, puffy free-from pancakes. When I did occasionally try I didn’t bother to record what I was doing as I doubted they would work. However a couple of weeks ago, on a lazy Saturday morning, I decided to give them another go – I am not normally defeated by making food free-from allergens! I was ready for the fight* (read – experimentation) We had no commitments that day so with Aars as my taste tester we had another go, making it up as we went along, and after about 5 pancakes I had adapted the mix so that I was finally making perfect free-from everything pancakes!! But I hadn’t written anything down as I went. Grrrrrrr!
So the last couple of weekends these pancakes have been made and made again as I ensured that these were the ingredients and proportions required. And now I can finally provide you with a recipe which is free-from everything and works perfectly! I do hope you enjoy them as much as we have over the past couple of weeks! And I can finally stop messing about with various gluten-free flours and enjoy the simplicity of these pancakes!
