Heavenly Hazelnut Brownies!

Having overindulged on my BOOM brownies when I first came up with them I have had quite a long break from brownies! However craving some dark chocolate goodness after France I decided to make some really indulgent hazelnut ones. They rock! Super scrummy and all things considered not really bad for my bod either… I hope you enjoy x

Heavenly Hazelnut Brownies! – Ingredients

whole hazelnuts, baked sweet potato, mini marshmallows, soft brown sugar, sunflower oil, home made nutella, almond paste (a.k.a almond butter) raw cocoa powder, vanilla extract, bicarbonate of soda

Heavenly Hazelnut Brownies! – Process

  • Soak ¹/3 C hazelnuts over night
  • Pre-heat your oven to 200°C
  • Once it’s hot pop into the oven:
    • 1 sweet potato
  • Leave it in for about 30 mins until cooked through
  • Get the sweet potato out of the oven and turn the temperature down to  160°C
  • Remove the flesh of the sweet potato from its skin
  • Into a bowl add:
    • ½ C hot sweet potato flesh
    • ½ C mini marshmallows
  • Mash ’em all up so the marshmallow melts into the sweet potato
    chopped hazelnuts
  • Drain your soaked hazelnuts and give them a good rinse
  • To the marshmallow mash add:
    • ½ C soft brown sugar
    • ¼ C oil (I used sunflower you can use coconut)
    • ½ C homemade nutella
    • ¼ C almond paste (a.k.a almond butter)
    • ¹⁄3 C raw cocoa powder
    • ¹/3 C soaked, rinsed & chopped hazelnuts
    • 2 tsp vanilla extract
    • ½ tsp bicarbonate of soda
  • Once it’s all combined put into a lined cake tin (I use a metal pan as my cake tins are either too
    in the pan ready to bake

    small or too big for this amount of mix!)

  • Pop into the oven for 20 minutes (regardless of if it has made its way down to 160°C
  • When it comes out of the oven you need to leave it too cool for a bit – as hard as it is to resist the incredible smells.
  • When it’s cooled enough to hold together dish that brownie up!!

It’s really really rich so you don’t need huge servings! The great thing about this brownie is it can be reheated when ever you fancy, I store it in the fridge and then reheat it in the oven when ever I fancy a square. Hope you enjoy x
