
Not the greatest title – maybe you could come up with something better for me? All suggestions welcome!
This is a really subtle Asian broth, not as zingy or spicy as the one I posted in Autumn. This one is warming and comforting, fresh and refreshing. It tastes good and feels like you are doing your body a favour by eating it; nurturing and aiding your bodies health. It can be pared right back, if you are allergic to soy sauce or sesame cut them out and use a different high heating oil and salt instead. I love ginger, lemon grass, coriander… but again not all of this is necessary – you can make it as simple (or as complex) as you like.

Winter Warmer Noodle & Broccoli Broth – Ingredients
fresh tender stem broccoli, fresh ginger, fresh chilli (I use cayenne), lemon grass, sesame oil, sesame seeds, vegetable broth, soy sauce, rice noodles, fresh coriander, fresh juice of lemon or lime
Winter Warmer Noodle & Broccoli Broth – Process (for 1 bowl for you!)
- In preperation chop up
- 2 cm² fresh, skinless ginger into small pieces
- half a cayenne pepper into tiny pieces
- chop a lemon grass in half and crush one half of it
- In a heavy based pan add
steamy - 1 Tbsp sesame oil
- chopped up ginger
- chopped up chilli pepper
- crushed lemon grass
- Heat slowly so that the flavours infuse the oil
- Add:
- 1 Tbsp sesame seeds
- 125g tender stem broccoli
- Allow to heat up and cook for about 5 mins, stirring
slurping time! - I boil the kettle and make swiss bullion vegetable stock at this point
- Add:
- 300ml vegetable stock
- 50g rice noodles (I break mine so they’re easier to eat)
- a couple of shakes of soy sauce
- handful of fresh coriander leaves
- Stir, cover and leave for 3 mins
- Serve into bowl
- Add another little bunch of fresh coriander leaves on top and a squeeze of fresh lime (or lemon)
- Sup or slurp your soup & feel good x
