It’s Friday and time to treat yourself to a scrummy, sweet & sticky ginger cake! Although there is quite a lot of ginger in this delicious free-from recipe we’ve created, it is not too hot or fiery! We make ours extra sticky by pouring a sticky ginger glaze over the top of the cakes when they come out of the oven.
We are always on a ginger binge in our home. I have just enjoyed a very thick and scrumptious chocolate and ginger smoothie (nice-cream) made with at least double the amount of ginger root I recommend. It fired me up ready to create a sticky ginger cake. I had originally planned to make a carrot and ginger cake but it seems in the midst of my ginger-addiciton I forgot my intention to add the grated carrots to the mix. Carrot soup will be enjoyed some day soon, me thinks 🙂 silver linings and all that. Maybe a carrot and ginger cake will get made one day in the not-too-distant future too – although I am quite up for making this gluten-free ginger cake again.
I am VERY excited by this stem-ginger cake and can let you know that I found the mix so delicious I could have spooned the lot straight from the bowl into my greedy gob! I found the end result pretty sweet; and next time I will reduce the amount of syrup I use in the cake replacing it with water. My mother who is “not a desserts person” however, enjoyed it as is, so it may not be too sweet for you, I am aware that lots of people like a sweet hit with ginger. Give it a go as it is in the recipe below and then adapt it once you’ ve made up your own mind. Taste and palates are very variable.
This sticky ginger cake recipe works really well as little cupcakes and muffins – just be careful when you pour the glaze over the tops. Do it over a bowl, and leave them to drip dry on a cooling rack over a baking tray. If I’m not expecting folks round for coffee and cake I freeze the muffins and it means I don’t over indulge in their sticky YUM! When we take them out of the freezer I defrost a muffin for one minute in the microwave on the normal setting, it comes out warm and gooey – heaven.
If you live in a child-free house you could have a play with adding some malibu or rum to the mix for the ultimate, boozy, warm and sticky comfort cake!
