Seasonal Spicy Beautiful Banana Bread!

This is a favourite in our home, Aars friends always ask if there is any banana cake after they finish their tea. We have messed about with our normal recipe to make it a tiny bit more seasonal with extra grated nutmeg, ground cloves and cinnamon and it is gorgeous. It will infuse your home with these delightful, christmas spice smells. We also made it gluten-free as one of Aars friends is on a gluten-free diet and used to love this when he came round for tea. Apparently now we ALWAYS have to make it this way as it tastes sooooo scrumptious. Of course you can use normal plain flour in place of the gluten-free one; and play – add some ground ginger or some chunks of crystallised ginger into the mix if ginger is a must Christmas spice for you…Enjoy and let me know how you go 🙂

Bananas, sunflower oil, orange juice, demerara sugar, ground cinnamon, fresh nutmeg, ground cloves, gluten-free plain flour, baking powder, bicarb of soda, salt

Seasonal Spicy Beautiful Banana Bread – Process

  • Preheat oven 190 C
  • Line one bread tin with case (paper or silicon)
  • In a bowl mash up the following:
    • 2 large ripe bananas
    • 2 Tbs sunflower oil
    • 100 ml orange juice
    • ½ C demerara sugar

    • 2 tsp cinnamon (we heap these, as Aars loves cinnamon)
    • a good grating of fresh nutmeg
    • 1 tsp cloves (we heap – but make yours to your taste)
    • 1½ C gluten-free flour
    • ¼ tsp baking powder
    • ½ tsp bicarbonate of soda
    • pinch of salt
  • Once mixed (doesn’t need to be smooth, lumpy is good) dollop into the waiting loaf tin
  • Pop into the oven for 30 mins. (use a skewer to check)
  • Leave in tin for about 5 mins after getting out it of the oven
  • Then place on cooling rack

  • We like to dive in whilst they are still a little warm – slice a chunk off like bread…

Very yummy and simple to make with the added bonus of hardly any washing up! I have never had a chance to freeze the second loaf as these are devoured super speedily – makes a nice packed lunch treat too!
