
As you are probably very aware by now – we love the tasty cinnamon and cooked apple combo in our house. The fact that cinnamon is a Christmassy spice helps us enjoy the seasonal cheer all the more, as it means there’s no limit to how much cinnamon we can bung into our baking. This is a recipe which fulfils the hospital criteria for baked egg. I added some ground cloves and freshly grated nutmeg for that real Christmassy spiced taste – their fragrance is delightful as they bake (to me! Aars is obviously out of the house when they are baking).
Oaty, Apple & Cinnamon Muffins – Ingredient List
oats, apple juice, apple puree, plain flour, cinnamon, ground cloves, fresh nutmeg, baking powder, bicarbonate of soda, golden caster sugar, sunflower oil, egg

Oaty, Apple & Cinnamon Muffins – Process (makes 12)
- Preheat oven to 180°C
- Line muffin trays with cases (paper or silicon)
- In a bowl combine:
- 1 C oats
- 200 ml apple juice
- ½ C apple puree
- Leave the oats to soak in the apple
- Combine the dry ingredients in a separate bowl:
- In a large jug beat the following until just combined:
- 75 ml sunflower oil
- 1 egg
- Pour the oat and apple mix into the egg and oil and mix lightly
- Pour the lightly beaten liquid into the dry ingredients and stir until it is all pretty much combined – remember lumpy is always good! (Smooth mix means your muffins will come out more like rocks)
- Spoon into the muffin cases
- Pop into the oven for 30 mins
- Leave the muffins in their trays for 5 mins before taking out to place on cooling rack.

I put the majority of the muffins into sandwich bags and freeze them so that Aars gets a fresh one each morning. I pop one into his cake tin every eve so that it’s defrosted by morning and is ready waiting for him. I love them warmed up – just stick the defrosted muffins into a warm oven for about 7 mins… and they are ready as if freshly baked that moment. If you forget to get one out the night before, they also work well from freezer to microwave for 1 minute and onto the plate for breakfast!
