Lemon & Honey Tea (create your own SUNSHINE in a cup)

This is a lovely, warm, comforting drink (full of health benefits some would argue). I find it brings some summer freshness and zing into my life on these cold, wintery days. I chose a mug that suits my mood – my friends will tell you that when they come over they have to choose their own mug as I believe that what we drink from influences our enjoyment of the drinking experience! Plus I have a not-so-secret mug and glass obsession, the charity shops are a constant temptation…

Anyhooo today I chose a mug my son gave me because he’s on my mind – I am feeling grateful for him,  for the progress we are making in regards to food, for how content and happy he is; but I’m also quite weary – nearly overwhelmed by all the big decisions I am making on his behalf and with him – regarding allergy testing, foods, which secondary school… it’s one of the pressures of being a single mum, no shared responsibility. So I need some sunshine – a moment to sit and reflect, some space and a lovely drink to sup on whilst I do…here’s how I add some sunshine into my life!

Lemon & Honey Tea – Ingredients

Lemon, honey, hot water

Lemon & Honey Tea – Process

  • Boil a kettle!
  • Choose your cup/mug from which you want to sup
  • Into said mug add:
    • half a lemons juice
    • 1 tsp of yummy honey
  • Add the hot water (not boiling)

    another cuppa?
  • Stir until the honey is dissolved
  • Snuggle up in your favourite spot, breathe deep slow breathes and sup your sunshine whilst reflecting on the lovely things that have occurred in the last few days…

If you have the time and space make another cup with the other half of the lemon! If not cover it with cling film, bung in the fridge so you can have a sunny moment tomorrow.
