
This week I made some delicious ginger muffins, I also made some simple custard kisses. I had three different icings on offer in my fridge, so they got to create a flavour combination they fancied. The biscuits were custard flavoured and the children on the most part opted for chocolate icing, though a couple went for vanilla, and one little monkey kept coming and popping the bickies unadulterated and (un)noticed – he was peckish :).
I tried out my rose water icing on them too – tasted gorge, a little like turkish delight! But I love rose-water – it’s not everyones taste… These however are great for everyone egg-free, dairy-free, nut-free, soya-free and gluten-freereally easy to make your own – let me know your winning flavour combination.

Custard Kisses! – Ingredients

sunflower spread, icing sugar, vanilla extract, gluten-free self raising flour, custard powder (yes it’s egg-free)
Custard Kisses! – Process
- Pre-heat the oven to 170ºC
- Prep a baking tray with baking paper
- In a bowl beat the following thoroughly:
- 3 oz sunflower spread
- 1 oz icing sugar
- 1 tsp vanilla extract
- In a separate bowl mix:
- Add the dry ingredients to the wet ones and mix very well
- Even though the mix seems wet & cloying it rolls into little balls well
- Roll the mix into little balls and place on waiting baking trays
- You can leave them rounded or flatten them with two fingers (flatter ones are easier to make into kisses!)
- Pop into the oven for 15 minutes
- Place on a colling rack once cooked and ensure they are cool thoroughly before making into kisses
Butter-free butter cream – ingredients
sunflower spread, icing sugar + cocoa powder or rose water or vanilla extract
Butter-free butter cream – Process

(I made small amounts of each of the above – for each do the following and add your chosen flavour)
- In a bowl beat:
- 1¼ oz sunflower spread
- Beat until creamy then as you beat add in
- Add in either
- ½ tsp rose extract OR
- ½ tsp vanilla extract OR
- ¾ oz cocoa powder (you will need to reduce the amount of icing sugar to 2¾ oz)
- Beat it until it is very soft, then slowly add:
- 3¼ oz icing sugar
I pop these in the fridge fro half an hour to cool and congeal a bit!
