Crunchy Nut Chia Cookies

These are a yummy and healthy treat. They are very more-ish and so have rapidly disappeared from the kitchen. They are actually pretty filling, and rammed with great ingredients which are good for your bod as well as scrummy. I think that they comply with the paleo diet too! I was surprised by how fast these crunchy cookies were consumed as from my perspective they were a new, less sugary approach to baking.

They are gluten-free, egg-free, dairy-free, soya-free, peanut-free, sesame-seed-free… I am going to play around with the recipe over the coming weeks and months to create other yummy crunchy treats :). They are very nut based so apologies to those of you who have allergies to nuts. I would recommend you treat yourself to these scrummy flapjacks instead 🙂

Crunchy Nut Chia Cookies – Ingredients

almonds, hazelnuts, ground cinnamon, buckwheat flour, chia seeds, stem ginger, dates, maple syrup, coconut oil,

Crunchy Nut Chia Cookies – Process

  • Preheat your oven to 180° C (fan)
  • Prep a baking tray with some baking paper
  • In your liquidiser or spice blender blitz the following until they are nice sized chunks:
    • ½ C almonds
    • ½ C hazelnuts
  • Place your your chopped nuts into a bowl and add:
    • 1 tsp cinnamon
    • ½ C buckwheat flour
    • 2 Tbs chia seeds
  • Now in your liquidiser blitzt the following:
    • 3 balls of stem ginger
    • 5 dates
    • ¼ C maple syrup
    • 2 Tbs coconut oil

  • Dump the blitzed ingredients into the bowl with the dry ingredients
  • Combine them
  • Roll into balls and place on your waiting baking tray
  • Use 3 fingers to press them down into cookie shape
  • Pop into the oven to bake for 10 mins, until the edges start to darken (see pic)
  • Leave to cool and harden on a cooling rack
