Cinnamon tea is a wonderful home-remedy for sore throats and nasty coughs. It's wonderful for two reasons: firstly it works and secondly it makes my home smell cosy and delicious. In Egypt (where I grew up) this simple but exquisite brew is used to fight off throat infections and chesty coughs! So if the lurgy comes to our home I get a big pan of this on the go, topping it up throughout the day. In a heavy based pan (which has a lid) add your cinnamon sticks snapped in half, the muscovado sugar and then fill the pan with cold water, place the lid on and heat up until it's bubbling away and the smell is seeping out (scrumptious!) That smell means it's ready. Ladle out into cups, I add cold water to my sons mug as the tea is REALLY hot. Every few hours you can add more water and a little more muscovado sugar. The first brew is the weakest, it just becomes more and more cinnamoneee every time you reheat! cinnamon tea
