Root vegetables are in season, and this beetroot soup makes a perfect, yummy, great-for-your-tummy lunch. It also has another of my favourite seasonal ingredients in it; horseradish – I grow it in my garden and love the mellow heat it provides grated and chucked on top at the last minute, just before serving. If you’re not keen on fresh horseradish give it a miss, but if you like horseradish enjoy it’s sinus clearing effects!!
This beetroot soup has a seemingly odd ingredient that’s also in season now – the brambly apple – it adds a nice bit of tang to the flavour of this earthy soup. The beetroot flavour is strong so you cannot taste any apple when you sup your soup, but don’t miss it out, it’s essential! This soup tastes great accompanied by the savoury pumpkin muffins I shared the other day. Happy half-term to you all.
