Awesome Apple Cake with a Surprising Centre!

Aars has always loved apples, we used to pick them from our neighbours orchard and he loved crunching into them fresh from the tree. Since last year, however, he has not been able to eat raw apples – happily he can still eat baked ones, so we have had fun creating apple turnovers, apple crumbles and apple muffins.

Today I decided to create an apple cake with a scrummy surprising centre layered into it! It’s scrummy and I’ll defs be making it again 🙂 reckon it would go well with dairy-free custard too!

Awesome Apple Cake with a Surprising Centre! – Ingredients

gluten-free self-raising flour, demerara sugar, bicarbonate of soda, salt, apple puree, water, oil, cider vinegar, vanilla extract, cinnamon, muscovado sugar, roasted chopped hazelnuts, gluten free oats

Awesome Apple Cake with a Surprising Centre! – Process (makes 3 small cakes like the one photographed)

  • Preheat your oven to 170° C (fan oven)

  • Grease and flour your cake tins
  • In a mixing bowl combine the dry ingredients for the cake:
    • 1½ C gluten-free self-raising flour
    • ½ C demerara sugar
    • 1 tsp bicarbonate of soda
    • grind of salt
  • In a jug add your wet ingredients for the cake:
    • ½ C apple puree
    • 1 C water
    • ¹⁄3 C oil (I used sunflower oil)
    • 1 Tbs cidre vinegar
    • 2 tsp vanilla extract
  • In a small bowl prepare your centre surprise layer:
    bottom layer of cake mix
    bottom layer of cake mix
    • 1 Tbsp oil (I used sunflower oil)
    • 2 tsp ground cinnamon
    • ¹⁄3 C muscovado sugar
    • 2 Tbsp gluten-free flour
    • ½ C chopped roasted hazelnuts
    • ¼ C gluten-free oats
  • Stir this well so everything is combined and set aside
  • Now you’re ready to make your cakes
  • Add the wet ingredients to the mixing bowl of dry ingredients of flour and sugar for the cake and beat until combined
  • Spoon a base layer of cake into your waiting cake tins

  • Spoon a layer of your surprise centre of nuts, oats & cinnamon covering the cake layer
  • Spoon another layer of cake mix over the top of the nuts, oats & cinnamon so it’s totally covered
  • Pop into the oven for 20 minutes
  • When its cooked (skewer to check) turn out one a cooling rack

Eat as soon as you fancy! Best enjoyed fresh from the oven and shared with a friend and a pot of peppermint tea as I got to today 🙂
