watermelon juice

This watermelon juice is really refreshing, filling and chilling! If you are overheating in the sun and need something to cool you down this juice is just the ticket. Most of the nutrients in watermelon are found in the rind, rather than in the flesh, so I scrub my watermelon and juice the whole thing, skin and all. It means I get all the good stuff in my juice, and you don't need a strainer - it juices perfectly! I juice the seeds too 🙂 but you can remove yours if you prefer.

Ingredients:

  • ½ small watermelon (or ¼ large watermelon)
  • 1 small cucumber (or ½ a large cucumber)
  • a few good sprigs of mint* 
  • 1 lime (I remove the skin from mine, leaving as much rind as possible)

Method:

  1. Prep your fruit by scrubbing the watermelon, cucumber and lime if you're not going to skin it. Chop it all into good sized chunks for your juicer

  2. Juice the watermelon and cucumber together, then the mint* and lime. 

  3. Clean your juicer, then enjoy your juice! 

Notes:

*I use a mild and mellow pineapple mint for this juice - it's a pineapple mint with variegated leaves - you can see it in the photo. If you want mint to dominate this juice go for a stronger one like black peppermint. 

I find this juice REALLY filling! It keeps me going on sunny days.
