spiced vegan & gluten-free flapjacks

spiced vegan & gluten-free flapjacks

Rammed full of fabulous flavoursome Christmas spices these flapjacks super simple to make. 

Ingredients:

  • 9 oz sunflower spread
  • 9 oz sugar (we use a Demerara and stevia mix)
  • 2 Tbs golden syrup
  • 2 tsp ground cinnamon
  • 2 tsp ground ginger
  • ¼ tsp ground cloves
  • grating of nutmeg
  • 15 oz gluten-free oats and quinoa flakes*

Method:

  1. Preheat the oven to 180°C (fan) and prepare a baking tray with baking paper. 

  2. In a heavy based pan add the fat, sugar, syrup and spices and heat up slowly until the fat has melted and the sugar dissolved. 

  3. Take off the heat and stir in the gluten-free oats and quinoa mix. 

  4. Pour the lot onto your baking tray and spread the mix out so that it's even. Pop into the oven for 13 minutes. 

  5. Once it comes out of the oven leave to cool for 5 minutes, then slide onto a chopping board and cut into squares. 

Notes:

*quinoa flakes give a lovely nutty flavour to the flapjacks which is such a treat if you live nut-free. (I do 2 parts gluten-free oats, 1 part quinoa flakes.) 

We decorated ours with little edible gold stars for Christmas 🙂
