spiced apple porridge

This porridge is proper winter-warmer, a perfect set-you-up-for-the-day brekkie. The oats provide a lovely slow release of energy which will see you through until lunchtime. We love the tartness of the apples in this porridge and enjoy them having a little bit of bite, so you get that fab flavour hit as well as the cosy cinnamon spice.

If you're like us and have a box of stewed apples sitting in the fridge you can make this porridge even more quickly by making our basic healthy porridge and stirring in the stewed apple once the oats have absorbed the water. Keep stirring until the stewed apples are heated through.

 

Ingredients:

  • 1 peeled, cored and chopped bramley apple (the smaller the pieces the faster this is)
  • Boiling water to cover half the apples
  • sprinkling of cinnamon
  • 1 tsp soft brown sugar
  • 1 C cold water*
  • ½ C gluten-free oats**
  • 1 tsp soft brown sugar
  • grind of pink himalayan salt

Method:

  1. In a heavy bottomed pan add all the ingredients, then stir until combined.

  2. Cover and cook over a low flame until the oats have absorbed all the water.

  3. Transfer into a bowl of choice, and add your favourite topping. The photo shows Aars favourite topping - the ever simple cinnamon and sugar partnership.

Notes:

*If you want to get more nutrients into yourself or your child use a m!lk alternative instead of water - like coconut m!lk or oat m!lk (or a nut m!lk if you are not allergic). They work really well in porridge. 

**I use the larger jumbo gluten-free oats, rather than the heavily milled Nairns gluten-free oats for my porridge.
