This juice is mellow and lovely, a gentle way to start the day and the bonus is that it's really good for your digestive system.

Ingredients:

  • 4 huge handfuls of kale*
  • 1 cucumber
  • 1 pineapple (top, tale and skin)
  • handful of mint

Method:

  1. Rinse and drain the kale, cucumber and mint. 

  2. Cut the pineapple and cucumber to sizes which will work in your juicer. 

  3. Juice the kale and pineapple together, then the mint and cucumber together.

  4. Wash the juicer, pour the juice into your favourite glass and enjoy! 

Notes:

*I use organic kale and cucumber as the skin goes through the juicer and into my juice. I grow my own mint so that's organic too. The pineapples I use are not as I remove their skin before juicing, but I try to get fair trade pineapples.

I tend to drink half in the morning and put the remaining half in a sealed jar in the fridge to enjoy at lunch time.
